Once you get in the swing of making these kind of flour-less "breads" you can try a range of different options - e.g. swapping the blueberries for raspberries, or the banana for a mango, or the nuts for different types of ground seeds - flax is worth experimenting with too.
- 2 tbsp. extra virgin olive oil
- 2 cups walnuts
- 1 cup ground almonds
- 2 tsp. gluten free baking powder
- 1 ripe banana
- 3 large eggs
- 2 tbsp. honey
- 2 handfuls of blueberries
Grease a loaf pan with a little of the olive oil and line with baking paper. Preheat the oven to 180 degrees C or 350 ° F.
Grind the walnuts in a blender and add the ground walnuts to the ground almonds and baking powder in a mixing bowl.
Put the banana, eggs, remaining olive oil, and honey in the blender and mix until all broken down.
Add the wet mixture to the dry mixture and stir with a wooden spoon.
Add the blueberries and stir.
Pour the batter into the loaf pan and bake for 30 minutes, or until a skewer comes out of the mixture clean.
Remove from the oven, turn out, and allow to cool.
